I came up with this next recipe while listening to one of my favorite singers, Ella Fitzgerald. Here it is... Get a nice
thick piece of salmon. If you get salmon steaks, look for ones with short
'legs.' These are the pieces that are closest to the tail of the fish,
and tend to be mo' better. Salmon is good, and good for you. So get a
salmon filet, or some salmon steaks and... 1 Tablespoon grated fresh ginger 1-2 Tablespoons chopped scallions Hot sauce...to taste Maple syrup...to taste Spread it over the fish and serve. This goes great with steamed string beans, topped with toasted, slivered almonds, and some of the reduced marinade.
