I came up with this next recipe while listening to one of my favorite singers, Ella Fitzgerald. Here it is...

Get a nice thick piece of salmon. If you get salmon steaks, look for ones with short 'legs.' These are the pieces that are closest to the tail of the fish, and tend to be mo' better. Salmon is good, and good for you. So get a salmon filet, or some salmon steaks and...

Marinade:
1 Cup of low sodium (Lite!) Soy Sauce
1/2 cup dry sherry
1 Tablespoon minced garlic

1 Tablespoon grated fresh ginger

1-2 Tablespoons chopped scallions

Hot sauce...to taste

Maple syrup...to taste

Now, keep in mind that these measurements are relative. If you like it sweeter, use more maple syrup. Spicier - use more hot stuff. You catch my drift?

Mix up all of this stuff in a bowl. Pour half of the marinade over the fish, and stick in the fridg for an hour. Turn it over. Marinade for another hour. Remove from fridg, let fish get to room temperature (about a half-hour)

Heat oven to 400 degrees. Put the fish in the oven for 12-15 minutes. When it's flaky, it's done.

Reduce the remainder of the marinade in a small sauté pan under high heat. Reduce by about half.

Spread it over the fish and serve. This goes great with steamed string beans, topped with toasted, slivered almonds, and some of the reduced marinade.
